The Airline Chef may have been schooled as a restaurant chef but the discipline for creating culinary concoctions for the airline industry takes on quasi-mass production ready-to-eat foods that have to conform to certain standards to be easily served while on cruising aircraft altitude.  While their first class entries can rival the finest cuisines in first class restaurants, the business and coach classes are often designed to be contained in a small tray and packaged for the long trips that are specified to fit inside certain aircraft galley types.  In addition the foods are processed to meet thousands of meal requirements, depending on the extent of airline operations s per day.
